For some reason, I always envisioned Jack and the Beanstalk referring to castor beans. The plants are very tall, grow extremely fast and have such distinctive seeds. Of course, castor beans are not a leguminous seed and by no means edible. Per unit weight, castor beans are one of the most toxic compounds known. When we shared Wendy’s delightful tale and salad last night, I knew I needed to look up castor beans. Found out they are a native of the Ethiopian region of tropical east Africa and have been found in ancient Egyptian tombs dating back to 4000 B.C. So it is possible Jack and the Beanstalk refers to castor beans, funny the way my mind “reads” details into stories!

I always felt beans are a symbol of spring and the growing season, simply because they are so easy to sprout-

Gotta read that cookbook. Beans ‘n’ rice (Hoppin’ John) is a New Year’s fertility symbol in more than a couple of post-African cultures. And castor beans originated near where coffee comes from; hmmm…
